After one of Mata Bingin‘s recent Instagram posts that featured a picture of our famous banana pancakes we had so many people ask us for the recipe of the pancakes which so many of you already tried during the years.
The recipe was originally created by our Chef Made who is with us for almost 25 years now. Since then the recipe hasn’t really changed. And here it is:
Ingredients
(for 1 pancake)
1 ripe banana
1 egg
3 large tablespoons flour
2 large tablespoons of condensed milk (fresh milk is also possible, then add ½ teaspoon of sugar)
50ml water
Pinch of salt
2 tablespoons butter (little more if you use oil)
2 tablespoons honey (or chocolate cream)

Directions:
Step 1:
Cut the banana in long thin slices
Step 2:
In a mid-size bowl, sift together the egg, milk, flour, salt and water and mix until smooth. The batter will seem pretty liquid but that’s ok.
Step 3:
Let the butter melt on low heat in a mid-size pan
Pour the batter in the middle of the pan and pivot the pan untill the batter has spread evenly
Add the banana slices in the freshly poured batter so they sink in. Arrange them nicely in the pan – be creative, make a star shape of create your own 😉
Fry at low-medium heat until the pancake is slightly brown and then turn it around
Wait until the other side is slightly brown too
Step 4:
Place the pancake on a plate and sprinkle the honey (or chocolate cream) on top
Place a slice of lime in the middle or sprinkle the pancake with it right away
Step 5:
Enjoy and think of Mata Bingin 😉
